Mezcales and Tequilas are the world’s most diverse spirits—made from hundreds of agave species and shaped by regional traditions. There’s no single “right” way to taste them. Cascada worked with agave spirits and tasting experts to create a clear, repeatable protocol anyone can use to assess and compare tequilas and mezcales.
Three simple steps: swirling to enable aeration of the spirit, exploring the nose to reveal layered aromas + levels of ethanol burn, and tasting for primary flavor families. By using the agave flavor wheel alongside a concise scoring framework, tasters can record observations consistently across different spirits and glass types.

Agave Flavor wheel:
The Agave spirits flavor wheel was developed by Ana Maria Romero Mena in 2007 and maps the complex sensory landscape of tequila and mezcal into approachable categories—earthy and vegetal notes (green agave, fresh-cut cactus, herbaceous cilantro), fruity and floral facets (citrus peel, tropical fruit, jasmine), sweet and caramelized tones (baked agave, honey, molasses), smoky and wood-driven characters (peaty smoke, charred oak, cedar), savory and mineral elements (saline, wet stone, roasted nuts), and spicy, peppery accents (black pepper, cinnamon, anise).
Together these segments help tasters isolate aroma and taste components, track how flavors evolve from first sip to finish, and compare expressions across agave species, terroirs, production methods, and aging regimes—making the often-intimidating world of agave spirits more tangible and discoverable for both novices and seasoned palates.

Cascada Protocol:
1oz Pour to Hip (room temperature)
Step 1: Swirl 30 seconds
Step 2: Aroma + Ethanol Burn
Step 3: Taste profile
Swirl the tequila in the glass for 30 seconds to help it aerate and release its aromas. Hold the rim of the glass about ½ inch from your nose and take a gentle sniff.
Take a small sip and let the tequila rest in your mouth briefly, allowing it to coat your tongue before swallowing. Ideally, you should recognize the same flavors you detected in the aroma.
The final step is to assess the texture and the finish. Tequila may feel smooth, mellow, light, or full-bodied. When the flavors remain on your palate after swallowing, this lingering sensation is known as a long finish.
